Key learning outcomes
|
Graduates understand the principles and procedures of the entire production process, from the preparation of raw materials for fermentation, its establishment, the distillation process, to the bottling of the final product. They can describe in detail the chemical and biological processes that take place during fermentation and other stages of production, define the legislative requirements relating to the production and distribution of spirits, liqueurs, and vinegar, and find, explain, and apply the hygiene and safety standards necessary for the operation of a distillery and vinegar factory. operates and sets up technological equipment used in the production of spirits, liqueurs, and vinegar (fermenters, distillation, vinegar production, bottling), analyzes the quality of raw materials and the course of individual production processes, applies hygiene procedures to ensure product quality and safety, is able to solve problems in the technological process and propose their optimization, is able to minimize the impact of the technological process on the environment, and is able to use renewable energy sources in the technological process.
