Course content
1. General terms - definition of goods and commodity production, utility, exchange and consumer value 2. Classification of goods. 3. Quality - complex concept, meaning, quality features and requirements. 4. Quality management systems - standards, quality standards. 5. Quality assessment of goods - meaning, procedure, methods. 6. Utility properties - distribution. Chemical composition and nutritional value of food. 7. + 8. Effects on utility properties - physical, biological, chemical, social. 9. + 10. Protection of goods - care and preservation. 11. Storage, packaging and packaging technology. 12. - 14. Practical product knowledge - concepts, classification, quality requirements, labeling, storage and marketing of products.

Monologic (reading, lecture, briefing)

  • Semestral paper - 24 hours per semester

Learning outcomes
This course introduces the students to the basic theories behind commodities science. The course will contain comprehensive knowledge of the common conceptual model within the classification of products including their characteristics and their conservation.
Students understand the basic concepts of commodities
Prerequisites
All students who are required to complete the course will be introduced at the beginning of the semester.

Oral examination, Seminar work
