Course content
|
Content of lectures: 1. Introduction to nutrition: Essential terminology, general aspects of nutrition, historical overview. 2. Physiology and biochemistry of nutrients I: Nutrients as sources of energy, energy content of food. 3. Physiology and biochemistry of nutrients II: Role of minerals and trace elements. 4. Physiology and biochemistry of nutrients III: Role of vitamins and biologically active substances. 5. Digestion and absorption: Roles of organs of digestion, enzymes and hormones. Breakdown of individual nutrients. 6. Metabolism: proteins, fats, carbohydrates 7. Optimal intake of nutrients: recommended daily doses for nutrients, fluids and energy. 8. Principles of correct nutrition: Recommendations for population, manufacturers, caterers. 9. Nutrition for individual age groups: Nutrition for babies, children, adolescents, expectant mothers, for breastfeeding women, for the elderly. 10. Nutrition in special circumstances: Nutrition for those active in sports, nutrition in extreme circumstances. 11. Alternative diets: Vegetarianism, macrobiotics, separating nutrients in diet, "fit for life", raw food diet. 12. Nutritional status of population: Retrospective and prospective methods, clinical - biochemical investigations. 13. Nutritional status of population: Results of investigations in Czech Republic and the EU. 14. Dietetics: Treatment and prevention of common nutrition related diseases. Content of practices:

Learning outcomes
|
These lectures provide information about the importance of nutrients, main types of food and drinks, the need for nutrients, principles of a healthy diet, nutritional needs of different age groups and alternative diets. They give an overview of special diets used in treatment and prevention of chronic diseases related to diet and in treatment of metabolic disturbances, they give information about methods used in assessment of nutritional status of population and compare nutrition in Czech Republic with nutrition in EU countries.
Student understands metabolic phenomena and knows dietary values of basic food types.

Oral examination
Student is asked 3 questions. Each of them must be answered at least with grade 3.
