Course content
|
Basic concepts of quality and legislation on products of animal origin. Factors affecting the quality of animal products. Production and consumption of main animal products and their chemical composition, nutritional value. Physical and technological properties of animal products. Primary production and realization of milk, quality requirements for milk processing. Transport of animals, animal slaughter, veterinary inspection and classification of slaughtering animals. Storage of animal products.

Learning outcomes
|
The course provides to students knowledge concerning chemical, physical and technological and properties of the animal products and describes factors affecting above mentioned properties during the primary production, processing and storage. The course also covers the information on production, current consumption and the quality management systems in the primary agricultural production.
Knowledge of chemical and other important properties of products of animal origin, knowledge of legislation a requirements of animal products, basic laboratory skills.

|
Oral examination, Seminar work
Standard knowledge of chemistry, quality assessment of animal products and progressive methods of meat processing.
